During the second and third week of September, in the older vineyards the best bunches are harvested and placed in plateaux.

BLEND
50% Corvina, 40% Corvinone, 10% Rondinella.
VINIFICATION
Natural grape-drying process in the historic building. Vinification starting from December. Cold maceration for some days. Low temperature long fermentation, with daily remontage and delestage processes. Ageing for 36 months into new French barriques.
AGEING
36 months in bottle. Closure with natural cork.
TASTING
Colour: ruby red, tendent to garnet throughout ageing. Bouquet: touches of ink, undergrowth, roasted coffee and bitter cocoa. Cherries in alcohol and hints of aromatic herbs.
On the palate: balanced, enjoyable, fine and elegant tannins, long finish.
Alcohol: 16%.
Total acidity: 6,7 g/l.
Residual sugar: 0,6 g/l.
