During the second and third week of September the bunches are selected, hand-picked and placed in plateaux.

Guyot and simple pergola
BLEND
65% Corvina, 25% Corvinone, 10% Rondinella.
VINIFICATION
Bunches are left to ventilate naturally for a few days.
Low temperature fermentation and maceration, with daily remontages and delestages. Malolactic fermentation in small steel tanks. Ageing for about 15 months in French barriques and amphorae.
AGEING
24 months in bottle. Closure with natural cork.
TASTING
Colour: medium intensity ruby red with strong transparency tendent to garnet throughout aging.
Bouquet: strong spices, hints of chocolate, dates and caramel, cranberries and plums, great complexity.
On the palate: tight but silky tannins, before a long, flavorful finish.
Alcohol: 14,5%.
Total acidity: 6 g/L.
Residual sugar: 1,8 g/L.
